Ingredients
- 1 pita bread
- 1 tablespoon of your favorite hummus add more if needed
- 1 small cucumber (or a Persian cucumber) we need only a handful of slices
- 3 slices tomato thickly sliced
- to taste salt flakes
- to taste Fresh basil
- to taste Extra-virgin olive oil

Instructions
- Heat the pita bread in a toaster oven to desired warmth.
- Spread the hummus over the pita and layer the finely sliced cucumber, followed by the tomato. Add salt flakes, olive oil and some basil. fold and enjoy.
- Serve the remaining cucumber as a side, to dip in more hummus.
- You can add falafel to this sandwich, or my tofu meatballs (I had it with the meatballs and it was absolutely fantastic).
