- 1 tsp Extra-virgin olive oil
- 2 1/2 cups fresh pumpkin seeds pepitas
- 2 tablespoons unrefined cane sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon cloves
- 1/2 tsp kosher salt

- Preheat the oven to 400 degrees F. Prepare a baking sheet covered with parchment paper, and set aside.
- Wash the pepitas in cold water, and clean them from the pumpkin. Dry them well on a kitchen towel (don't use paper towel, or it will stick). In a mixing bowl, mix salt, sugar, and spices.
- Spread seeds on the baking sheet, and dry them in the hot over for 15 minutes.
- When they are dry, season them on the same baking sheet with the olive oil and the spice mix. Bake for 12-15 more minutes.
- Let cool completely.
