Preheat the oven to 400 degrees F. Prepare a baking sheet covered with parchment paper, and set aside.
Wash the pepitas in cold water, and clean them from the pumpkin. Dry them well on a kitchen towel (don't use paper towel, or it will stick). In a mixing bowl, mix salt, sugar, and spices.
Spread seeds on the baking sheet, and dry them in the hot over for 15 minutes.
When they are dry, season them on the same baking sheet with the olive oil and the spice mix. Bake for 12-15 more minutes.
