Tip: if your toddler doesn't want to try this, sit down with them and roll a spaghetti along a green bean; they will laugh, then eat it, then love it. Catherine started with: "I don't like this!" and ended up eating 2 plates. I didn't meditate that evening because I entertained her dinner until bath time (that's how much she ate)...but what the heck!

Ingredients
- 320 gr Spaghetti
- 1 fresh tomato chopped
- garlic to taste
- Fresh basil chopped, to taste
- 1.25 lbs fresh green beans
- salt, pepper, extra-virgin olive oil and chili flakes to taste

Instructions
- To start, clean the green beans by removing both ends and the thread along the. Rinse.
- Cook green beans in salted, boiling water for 15 minutes (until nice and tender). I don't like undercooked green beans
- place green beans in ice bath for a few minutes (this will give them the beautiful green color and stop the cooking)
- Cook pasta al dente (9-10 minutes) in boiling, salted water
- Meanwhile, sauté the green beans with olive oil and garlic (optional). Add the chopped tomatoes, the fresh basil, and the chili flakes (optional).
- Stir in the pasta and sauté for 5 minutes to allow all the flavors to gather.
- Grate some fresh pecorino or parmesan cheese on top and enjoy straight away.

Recipe Notes
Green beans are a spring/summer vegetable. Try and resist buying them in the winter. It will make even more special when you have them at the first ray of spring sun!
