Pasta with Green Beans and Fresh Tomatoes
This pasta is perfect for a light, summer evening. Tip: if your toddler doesn't want to try this, sit down with them and roll a spaghetti along a green bean; they will laugh, then eat it, then love it. Catherine started with: "I don't like this!" and ended up eating 2 plates. I didn't meditate that evening because I entertained her dinner until bath time (that's how much she ate)...but what the heck!

  1. To start, clean the green beans by removing both ends and the thread along the. Rinse.
  2. Cook green beans in salted, boiling water for 15 minutes (until nice and tender). I don't like undercooked green beans
  3. place green beans in ice bath for a few minutes (this will give them the beautiful green color and stop the cooking)
  4. Cook pasta al dente (9-10 minutes) in boiling, salted water
  5. Meanwhile, sauté the green beans with olive oil and garlic (optional). Add the chopped tomatoes, the fresh basil, and the chili flakes (optional).
  6. Stir in the pasta and sauté for 5 minutes to allow all the flavors to gather.
  7. Grate some fresh pecorino or parmesan cheese on top and enjoy straight away.

Green beans are a spring/summer vegetable. Try and resist buying them in the winter. It will make even more special when you have them at the first ray of spring sun!
