These are some of my favorite cookies, made with hazelnut flour and Italia espresso. They are vegan, decadent, rich and healthy. Please try and make them, send me your photos, and I will share them on my Instagram.

Ingredients
- 150 gr hazelnut flour
- 100 gr all-purpose flour
- 50 gr potato starch
- 75 gr sugar
- 20 ml coffee (either espresso, or americano) I used leftover coffee from the morning
- 1/4 tsp Baking powder
- 15 gr raw unsweetened baking cocoa
- 1 pinch Salt
- 10 gr espresso powder I used KIMBO Italia espresso
- 80 ml walnut or hazelnut oil
- 1/4 tsp Vanilla extract
- 20 ml almond milk

Instructions
- In a mixing bowl, mix all the dry ingredients together.
- Add the coffee, the milk, the oil, and the vanilla extract.
- Form six balls, then press them into patties (watch the video).
- Bake for 10 minutes at 425F with convection on.
- They will be your new addiction.
