Ingredients
- 2 slices nut and fruit bread I love mine from Old Town Baking Company (NOT AN AD)
- 2-3 tbsp aromatic goat cheese* I used Cypress Grove Purple Haze (NOT AN AD)
- 3 slices baked delicate squash*
- vegan butter to taste
- salt fakes to taste
- Fresh thyme to taste

Instructions
- Spread the goat cheese on one slice of bread (read notes)
- Add the previously bakes delicate squash slices (read notes)
- Add salt flakes and close the sandwich
- Spread some butter on the outer top slice and toast to desired darkness
- Enjoy warm.
Recipe Notes
* If you don't have flavored goat cheese, make your own by adding finely chopped thyme, dill, rosemary and lemon zest to a plan kind. Whip it and spread it on your toast.
* I sliced (1/2-inch) and deseeded my delicate squash, then baked it for 30 minutes at 425 F with extra-virgin olive oil, salt, pepper and a light sprinkle of dill and cinnamon.
