This is the second episode of Instagram to Table, from June, 2019, when we were still living in the old house.
Ingredients
- 1 can organic black beans
- 1 cup organic cherry tomatoes
- 1/4 cup shaved parmesan cheese
- 1 tablespoon Chives either fresh or dry
- 2 leafs basil fresh
- to taste Extra-virgin olive oil
- to taste balsamic vinegar
- to taste balsamic reduction
- to taste salt flakes
- to taste Black pepper

Instructions
- Rinse the beans and place them in a medium salad bowl.
- Chop the cherry tomatoes, shave the cheese, and add to the beans. Chop the herbs and add to the salad.
- Dress the salad a few minutes before serving so it doesn’t become soggy. Add a good EVO, balsamic reduction and vinegar (the reduction gives a beautiful sweetness to the salad) salt and pepper to taste. Be creative with the dressing, add as much/little of it as you like.
