Black Bean Salad with Chives and Cherry Tomatoes
This salad is full of flavor and color. This is one of our favorites in the summer months, especially for lunch.

  1. Rinse the beans and place them in a medium salad bowl.
  2. Chop the cherry tomatoes, shave the cheese, and add to the beans. Chop the herbs and add to the salad.
  3. Dress the salad a few minutes before serving so it doesn’t become soggy. Add a good EVO, balsamic reduction and vinegar (the reduction gives a beautiful sweetness to the salad) salt and pepper to taste. Be creative with the dressing, add as much/little of it as you like.
