Ingredients
- 1 bunch organic kale finely chopped, well massaged
- 1 Carrot finely sliced
- 1 Fennel finely sliced
- 1 stick celery finely sliced
- 1 Persian cucumber optional or use any cucumber finely sliced
- 1 1/2 granny smith apple finely sliced
- 2 tablespoon dry cranberries chopped
- 1/3 cup walnuts chopped
- to taste EVO
- to taste balsamic vinegar
- to taste balsamic reduction
- to taste salt flakes I love flakes in my salad
- to taste Black pepper

- Rinse the kale and very finely chop it on a cutting board. VERY finely is the key to a perfect kale salad, at least according to my taste. Add to a salad bowl.
- With a mandolin, finely slice the rest of the vegetables and the apple. Add to the kale.
- Chop the cranberries and the walnuts. Add to salad.
- Dress with a good extra-virgin olive oil, some balsamic vinegar, a little balsamic reduction for some sweetness, black pepper and salt flakes (I love salt flakes in a salad).
- Taste before serving: this is my secret. Ingredients are every flexible unless you are baking, so trust your taste. Does is need oil, then add it, I will never give you a precise quantity of oil or salt. taste, taste, taste: if you like it, they will like it!
