Alice's Signature Kale Salad
This is a rich, bright, and beautiful kale salad that will transform any guest into a salad maniac; I promise!

  1. Rinse the kale and very finely chop it on a cutting board. VERY finely is the key to a perfect kale salad, at least according to my taste. Add to a salad bowl.
  2. With a mandolin, finely slice the rest of the vegetables and the apple. Add to the kale.
  3. Chop the cranberries and the walnuts. Add to salad.
  4. Dress with a good extra-virgin olive oil, some balsamic vinegar, a little balsamic reduction for some sweetness, black pepper and salt flakes (I love salt flakes in a salad).
  5. Taste before serving: this is my secret. Ingredients are every flexible unless you are baking, so trust your taste. Does is need oil, then add it, I will never give you a precise quantity of oil or salt. taste, taste, taste: if you like it, they will like it!
