Smoked Paprika Kale Chips

I don't think there is a better way to enjoy kale. Catherine, who is 2 and a half, couldn't stop eating them, and Ben and I ate the whole bunch. They are this good, and super easy to make.

  1. Rinse the kale and remove the green from the stem.
  2. Spin the kale in a salad spinner, and allow to dry very very well.
  3. Massage the kale with the desired quantity of smoked paprika, salt flakes, and extra-virgin olive oil. You can do this directly on the baking sheet, or in a mixing bowl.
  4. Place kale on the baking sheet (I had to cook it in two rounds because, for the kale to perfectly cook and dry, I wanted lots of space on the sheet)
  5. Bake at 250F for 15 minutes with convection on; at this point, move the kale around and bake for another 10-15, until the kale is nicely baked and crunchy.
  6. Place on a plate and allow to cool down and to completely dry. Repeat with the remaining kale.
  7. Add salt flakes to taste and enjoy! Buon appetito!
