This is one of my favorite spring salads. I love fava beans, and their season is so short that I buy them every time I find them and the farmers market between May and July.
This recipe is super easy, absolutely divine, very Italian, and very elegant in its simplicity.

Stuffed Bell Peppers Torino-Style
This recipe reminds me of bagna cauda, the traditional dish from Torino, where I am from. The key ingredients are anchovies and bell peppers, heavenly combination for a late summer evening with friends. The are fantastic warm, but they are even better the following day, also at room temperature.
Mediterranean Cauliflower Couscous
This is my version of the popular cauliflower rice, that to me is more of a couscous. I like mediterranean flavors that remind me of my origins, of my grandmother, of family, and of small, beautiful things in life. Enjoy! It’s healthy, delicious, and very easy to make.
Campanella pasta with Roasted Eggplant, Mint and Goat Cheese
This pasta is a very simple Italian summery recipe for everyday dinners, especially when you don’t have much time for elaborate recipes. I love goat cheese, and also the pairing of eggplant with fresh mint. Enjoy on a summer night.
