This is one of my favorite spring salads. I love fava beans, and their season is so short that I buy them every time I find them and the farmers market between May and July.
This recipe is super easy, absolutely divine, very Italian, and very elegant in its simplicity.

Warm Navy Bean Salad with Roasted Asparagus & Fennel
This dish takes 20 minutes to make, start to finish. It’s so good that it’s one of those recipes you would find in a fancy Italian restaurant. But you can make it at home (using canned beans)!
Sourdough and Spinach Meatless Meatballs
This is a fun way to serve vegetables to your kids, and also a fun, yummy way to eat spinach that taste like a fried bread meatball. Healthy, filling, packed with goodness, and 100% homemade. You can substitute spinach with kale or chard.
Penne with Spigariello, Fresh Tomatoes, and Ricotta Cheese
I love spigariello. This green, reminiscent of broccoli, belongs to the same family, but the flavor is mild, the crunch addictive, and it’s perfect for sides, toppings (yes, it makes an amazing flatbread), and, obviously, pastas!
