These are truly delicious! What a great way to eat vegetables (and cheese)! They are easy to make, and fun, also, so you can make them with your kids.
Eat them as an entree, or with tomato sauce and pasta. Who misses meat? I don’t!

Fava Beans, Asparagus, & Fennel Salad
This is one of my favorite spring salads. I love fava beans, and their season is so short that I buy them every time I find them and the farmers market between May and July.
This recipe is super easy, absolutely divine, very Italian, and very elegant in its simplicity.
Warm Navy Bean Salad with Roasted Asparagus & Fennel
This dish takes 20 minutes to make, start to finish. It’s so good that it’s one of those recipes you would find in a fancy Italian restaurant. But you can make it at home (using canned beans)!
Smoked Paprika Kale Chips
I don’t think there is a better way to enjoy kale. Catherine, who is 2 and a half, couldn’t stop eating them, and Ben and I ate the whole bunch. They are this good, and super easy to make.
Sourdough and Spinach Meatless Meatballs
This is a fun way to serve vegetables to your kids, and also a fun, yummy way to eat spinach that taste like a fried bread meatball. Healthy, filling, packed with goodness, and 100% homemade. You can substitute spinach with kale or chard.
