The Ultimate Chickpea Patty
These are so good that I wish I had created before the cookbook went to print! Oh well, next one. Easy, delicious, and vegan.

Ingredients

organic chickpeas
1
Carrot
1
Zucchini
1/4
onion
extra-virgin olive oil, salt, pepper and smoked paprika
to taste
fresh parsley, sage, rosemary and thyme
to taste
1
tsp
white wine
Instructions
Chop all the vegetables very finely and prepare a basic soffritto
Drain the chickpeas, and then mash them with a fork
Add the soffritto to the mashed chickpeas, season with salt, pepper and smoked paprika and add the finely chopped fresh herbs
Form the patties and cook them in a non-stick skillet with extra-virgin olive oil until nice and golden on both sides.
Enjoy warm or cold.
