The Ultimate Chickpea Patty
These are so good that I wish I had created before the cookbook went to print! Oh well, next one. Easy, delicious, and vegan.

Instructions
  1. Chop all the vegetables very finely and prepare a basic soffritto
  2. Drain the chickpeas, and then mash them with a fork
  3. Add the soffritto to the mashed chickpeas, season with salt, pepper and smoked paprika and add the finely chopped fresh herbs
  4. Form the patties and cook them in a non-stick skillet with extra-virgin olive oil until nice and golden on both sides.
  5. Enjoy warm or cold.
