Ingredients
- 8 oz extra-firm organic tofu
- soy sauce to taste (watch the show for info and tips)
- palm sugar to taste (watch the show for info and tips)
- rice vinegar to taste (watch the show for info and tips)
- sesame oil to taste (watch the show for info and tips)
- sesame seeds to taste (watch the show for info and tips)
- freshly grated ginger to taste (watch the show for info and tips)
- Chives to taste (watch the show for info and tips)
- water to taste (watch the show for info and tips)
- 2-3 tbsps potato starch you can substitute with corn starch

- Drain tofu, place a paper towel and a plate over it and allow to rest and completely drain for 30 minutes. The more water it expels the better it will taste.
- Cut tofu into 1-inch cubes, and sprinkle them all with approximately 1 tablespoon of potato starch.
- Stir fry the tofu cubes in extra-virgin olive oil, in a non-stick pan, until golden on all sides.
- Meanwhile, prepare the sauce: mix the soy sauce, the brown sugar, the sesame, the water, the rice vinegar, the chives if you have decided to use them, the freshly grated ginger, and 1 1/2 tablespoons of potato starch. Mix well and put over tofu in the skillet. The trick here is to try the sauce as you mix it. You can personalize until you reach the right level of sweetness, spicy, salty and tangy. There is really no right way other than slowly adding the ingredients and decide, with your own taste, if it does transport you into a Chinese restaurant. If the answer is yes, then the sauce is ready. Trust your instincts!
- Cook for a few minutes, until the sauce will thicken and create a nice coating around the tofu. Serve over rice, or with your favorite vegetables.
