Ingredients
- 4 Potatoes
- all-purpose flour as much as needed for the dough
- 1 bunch spigariello
- 1/2 cup goat cheese
- 1 Lemon zest
- Extra-virgin olive oil, salt, Parmesan cheese, pepper and chili flakes to taste

- Boil or steam the potato with skin on;
- Mash the potatoes and allow to cool;
- Rinse the spigariello and sauté in extra-virgin olive oil. Add salt and chili flakes to taste. Set aside;
- In a small mixing bowl, lightly whip the goat cheese with the zest of a lemon and a drizzle of olive oil. If you find it too thick you can use a tablespoon or two of heavy cream. Set aside;
- Make the gnocchi (watch the video);
- Boil the gnocchi 4 per time, and place them in a mixing bowl with some olive oil, to prevent them from sticking. When you have boiled them all, sear them with some olive oil in the same skillet where you have cooked the spigariello. They need to be golden on both sides.
- Assemble the dish by spreading a small quantity of goat cheese cream on the bottom of the plate; layer now 4-5 gnocchi, the spigariello, and repeat one more time. Grate some Parmesan cheese on top and enjoy.
