Ingredients
- 4 sugar cones
- 300 gr. ricotta cheese
- 3 tbsp cream cheese
- 2 tbsp Honey or more if you want a sweeter dessert
- 1/2 cup unsweetened shredded coconut mine was shaved and I love it
- 2 limes zest only, and you can use lemon if you don't have limes
- Vanilla extract to taste
- 3 tbsp almonds

Instructions
- Whip the ricotta and the cream cheese;
- Add the lime zest, the honey, and the vanilla extract;
- Add the coconut and mix well;
- Chill in the freezer for 5-10 minutes;
- Scoop it into the cone as if it were ice cream, and sprinkle some shaved almonds on top.
Recipe Notes
On the show, we also made a strawberry/chocolate one and, my favorite, nectarine and amaretti cookies.
You can make it with mint and chocolate chips, cookies and cream, peanuts and dried cherries....pretty much any combination of flavors to your tasting.
