Garbanzo Bean Salad with Shaved Fennel and Fresh Dill
A beautiful, healthy, salad with the perfect balance of: tangy, creamy, zesty, and crunchy. I love it! It pairs beautifully with the black bean salad (also in this video) that we have made in this second episode.

  1. Rinse the beans and place them in a medium salad bowl.
  2. Rinse and clean the fennel, then slice it with a mandolin. Do the same with the apple.
  3. Dress the salad a few minutes before serving with the desired amount of EVO, salt, lime juice, white pepper, and lime zest.
