End of Summer Fruit Bruschetta & Parfait

  1. Rinse and chop the fruit. I chose bite-size, but you can also thinly slice it.
  2. Sauté the peaches in butter, add some honey, the juice of 1/2 orange, spices, vanilla extract and a drop of orange blossom extract. Cook until peaches are very well caramelized and set aside. (Approximately 5 minutes).
  3. Sauté the plums in butter, do the same as you did with the peaches, but substitute red wine for orange juice and rosewater for orange blossom extract. Set aside.
  4. Toast the bread, spread some butter, and top each slice with a different fruit combination. Drizzle with honey and (optionally) top with chopped nuts or granola.
  5. In a small mixing bowl, lightly whip the yogurt with some vanilla extract and a very small amount of honey (optional).
  6. Start building the parfait: choose a cute, small jar, and begin by layering the fruit, the granola (optional) and the yogurt. Finish with a last layer of fruit.
Recipe Notes

As I said before, this is a recipe that really allows you to use the seasonal fruit you have at home, the type of yogurt you have in the fridge, and the spices you keep in the pantry.
